TOMATO SOUP ALÁ MIKI

TOMATO SOUP

Ingredients: 

2 cans of whole or chopped tomatoes

1 can of ratatouille (optional) - I used it because it smells nice and taste nice in the soup. 

pinch of cinnamon, herbs seasoning, natural sugar - I used erythritol. Someone maybe can use a ketchup instead eg. 

water (use can also use a bone broth or veg broth, what ever your stomach desire) 

potato dumplings called gnocchi ( and because I did not have enough, I made couscous or you can use any type of pasta if you like) 

 

Method

With food processor blend all canned tomatoes and ratatouille. Put it in the sauce pan, add some water, seasonings, and bring to boil. Boil it for 15 mins and than shimmer for another 15-20 min. If needed you add some more water (or broth). How to cook gnocchi - put them into boiling water and wait, until they will all come up. When they are all up - strain them.
